Nopalitos Antonianos

Ingredients ( Dinner for Two )

2 Cups of Nopalitos *
22 Large Shrimp ( marinated in Zesty Italian
dressing )
Slice 1/2 Large White Onion
1 Grilled Poblano (Peel, de vein and slice)
1 Garlic finely chopped
Cilantro finely chopped
1 Cup Mexican Shredded Cheese

In a Skillet, with two tablespoons of
vegetable oil, sauté onion and garlic over
medium heat. Add the shrimp and the
Poblanos till cooked. Add the Nopales and
continue cooking for a 2-3 minutes. Add
the cheese and cover. Lower heat and
simmer until cheese is melted through.
Served with refried beans and  French
bread on the side .

Top the plate with the chopped, fresh
Cilantro.
